SWEET POTATO NOODLES

Root vegetables balance hormones by balancing blood sugar through fiber. 

Recipe: 

2 sweet potatoes

 2 large bunch Swiss chards

 2 carrots 

1 onion 

2 zucchinis 

2 limes 

1 pack of noodles 

1/2 cup Coconut milk (can) 

1 cup Water

Spices: 

Salt to taste 

1/4 tsp Pepper 

1/2 tsp garlic powder

 Instructions: 

1. Boil the sweet potatoes, carrots, and onions in a small pot of water for about 20-25 minutes until tender. Drain the water when cooked. 

2. Boil your noodles 

3. While the pasta is cooking, prepare the sauce and sauté the swiss chards and zucchini. Blend the boiled sweet potatoes, carrots, and onions with the rest of the spices in a high-speed blender until smooth. After draining and rinsing the noodles. Pour the noodles with the sautéed vegetables and add the sauce. Stir together on low heat and squeeze some lime.
